The activities of choice this January in the British Virgin Island seems to be Sunbathing and Sailing, and from your emails we know many of you wish you were here to experience it all first hand. Don't worry, we made it to the beach for you.

Free Caribbee Recipe
|
With the cold weather still in abundance, January is the perfect month to celebrate and enjoy soups of all kinds.
*4 Tbs. Butter
*1 Med. Yellow Onion
*1 Tsp. Minced Garlic
In a large pot saute onion and garlic until soft. Add Caribbee Curry and cook 1 minute. Add carrots, boullion and Bouquet Garni. Simmer for about 30mins until carrots are soft. Remove Bouquet Garni. Puree in small batches in food processor. Return to pot and add milk. To serve cold: blend in yogurt and chill until serving time. To serve hot: add cream and reheat. Salt and pepper to taste. Garnish and enjoy!
