This pepper is typically used as a spice while cooking various types of seafood. It can also be sprinkled over soups, hors d'oeuvres and eaten with egg dishes. It also adds a little something to roasted, grilled, fried or stewed meats.It is not as hot as other peppers in its family, but, don't let that fool you, because it will peck at your taste buds just like a bird's beak.

Free Caribbee Recipe
Lamburgers DavidIngredients:
2 lbs. ground lamb 2 Tbs. Jerk Seasoning or 1-1/2 Tbs. Mango Kuchela 1 tsp. Seasoned Sea Salt 1/2 tsp crushed Rosemary
Directions:
  • Mix all ingredients well
  • Form into desired size patties: 1. Makes 16 sausage type patties for brunch or breakfast. 2. Makes 8 regular size patties for lunch or dinner.
  • Cook, according to size until preferred doneness (medium - medium rare is best)
